1 parchment-lined baking tray I suggest unbleached parchment paper and a stainless steel tray if available.
1 mixing bowl I just prep my salad in the same bowl I mixed the chickpeas in to save time washing!
Ingredients
13ozchickpeas I use 1 glass jar of precooked chickpeas
2tbsavocado or extra virgin olive oil
2tbspcurry powder
1/2 tsponion powder
1/2tspgarlic powder
1/4tspsalt
1 pinchblack pepper
Instructions
Preheat oven to 410 degrees. Drain chickpeas and pour into mixing bowl, then drizzle and mix oil.
Sprinkle all the spices without mixing them in. Once all have been added, with a fork, mix 3-4 times gently so that spices don't sink to the bottom of the bowl.
Place on parchment paper and then roast in oven on bottom rack for 20 minutes, stop to mix chickpeas, then continue to roast for 18 minutes. Let them cool after 38 minutes so that they crisp a bit more before consuming. Enjoy on salad, soups, or as a protein-filled snack!
