Roasted Spiced Chickpea Soup and Salad Topper
Crunchy, flavorful, and protein-packed roasted spiced chickpeas to add to salads or soups, or even enjoyed alone as a savory snack. These Roasted Spiced Chickpeas are easy to prep, and then roast to perfection in the oven as you prepare other parts of your meal.
Equipment
- 1 parchment-lined baking tray I suggest unbleached parchment paper and a stainless steel tray if available.
- 1 mixing bowl I just prep my salad in the same bowl I mixed the chickpeas in to save time washing!
Ingredients
- 13 oz chickpeas I use 1 glass jar of precooked chickpeas
- 2 tbs avocado or extra virgin olive oil
- 2 tbsp curry powder
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1 pinch black pepper
Instructions
- Preheat oven to 410 degrees. Drain chickpeas and pour into mixing bowl, then drizzle and mix oil.
- Sprinkle all the spices without mixing them in. Once all have been added, with a fork, mix 3-4 times gently so that spices don't sink to the bottom of the bowl.
- Place on parchment paper and then roast in oven on bottom rack for 20 minutes, stop to mix chickpeas, then continue to roast for 18 minutes. Let them cool after 38 minutes so that they crisp a bit more before consuming. Enjoy on salad, soups, or as a protein-filled snack!
